What is a “Sterilization” ?
“Sterilization” refers to a process of destroying microorganisms in a package to extend shelf-live of the contents.
The common practices in the food industry are heat treatments after the process of packaging.
We generally consider sterilization with hot water lower than 100 degrees Celsius as a boil treatment.
Retort is a sterilization with pressure and hot water temperature higher than 100 degrees Celsius.
